I borrowed this recipe from Nigella Lawson. I used it to wow some of my students and they loved it although they did suggest that I added some white chocolate. I could only eat it with yoghurt. However, I had some left over and thought I would have to feed them to the chickens but tried one and it was like nectar!


375g of unsalted butter, 375g of dark chocolate, 6 eggs, a tablespoon of vailla extract, 500g caster sugar, 225g plain flour, 300g walnuts, some raisins.

Melt the butter and chocoalte in a bain marie. Then use a large measuring jug to beat up the eggs with sugar and vanilla. measure the flour out into another large bowl.

When the melted butter has cooled off, add the eggs and sugar, then the nuts and flour. Put into a large tin and bake for about 25 minutes at 180C. You want them cooked on top but melting inside so keep your eyes on it.
