This would be a good camping dish after a hearty walk. If you catch them yourself you will have to gut and wash them.
Ingredients
Trout
Slices of lemon
Herbs – eg. fennel
Stuff them with a slice of lemon and some fennel. Bake in the oven or grill them. If you are camping you could cook them in the coals of the fire wrapped in foil. They are ready when the meat flakes off the bone.
Serve on a bed of salad with new potatoes and a good chunk of lemon to juice over the top. A glass of white wine would go down well whilst you contemplate the sun going down over the bush.
Trout tickling, according to Wikipedia, is a way of poaching trout without incriminating rods. Apparently you tickle the trout when it comes to rest on a rock. This puts it in a trance like state so that you can grab it and fling it onto the bank. It would be interesting to hear if anyone has achieved it!
